Sweet Potato Balls

4 large sweet potatoes, cooked and mashed
3 tbsp butter
1 tsp salt
1/8 tsp pepper
Pinch nutmeg and cinnamon
3 tbs. brown sugar
1.5 cups crushed cereal flakes
8 pineapple slices
8 maraschino cherries

Combine sweet potatoes, butter, seasoning and brown sugar. Drop 1/3 to 1/2 cup sweet potato mixture onto wax paper containing crushed cereal flakes and roll into ball. Butter pan and place pineapple in pan. Place ball on pineapple slices and top with cherries. Bake at 350 degrees for 20 minutes.

Kentucky Colonel Candy

There is apparently a funny story behind this, but I didn't get why it was funny.

1 lb powdered sugar
3/4 c chopped nuts
1/4 lb butter
1/3 cup whiskey

Soak nuts in whiskey overnight in tightly covered jar. Mix 1/2 pound powdered sugar, mix other half with butter. Roll into small balls and chill. Dip in melted chocolate using light and dark chocolate. Make balls the size of a walnut using powdered sugar on hand while forming.

Candy Buckeyes

Very popular around Columbus, Ohio. Go Bucks! Etc.

1 lb 2 oz jar of creamy peanut butter
1/2 lb butter (not shortening)
1 1/2 lbs. powdered sugar
1 tbs. coffee

Cream peanut butter and butter together. Add sugar gradually. The mixture will be very stiff. Add coffee. Form into balls about 1/2 inch around. Refrigerate 30 minutes.

4 oz semisweet chocolate
1/2 bar paraffin

Melt together in double boiler. Using toothpick, dip the ball into the chocolate enough to cover all but the top. Cool.

Seafoam Candy

1 1/4 cups light brown sugar, packed
1/2 cup water
1 egg white
1/2 tsp. maple flavoring

Make thick syrup with water and sugar. Bring to hard boil, or until you can spin a thread (hold spoon dipped in syrup between you and light as it drips, it will look like fine thread). While syrup is cooking, beat egg whites until they form peaks. Beat syrup slowly into egg white . Add flavoring. When candy holds peak drop by tsp.
