Rolls

3.5 c flour
1 tbsp salt
1 tbsp sugar
3 tbsp yeast
-Mix

1.5 c milk
1 tbsp butter
-Make dough
-Knead

Let rise 1 hour. Punch down. Grease baking sheet and dust with flour. Form rolls, about the size of a ping pong ball. Let rise 30 minutes, and preheat 425F.

1 egg yolk
1 tbsp milk
-Whisk with fork, glaze rolls. Sprinkle with sesame seeds or gezha.

Bake 15-20 minutes until golden brown.

Light Rolls

From Great-Grandma's recipe collection.

1 cake yeast
1/4 cup lukewarm water
1/4 sugar
1/4 butter
1 tsp salt
1 cup scalded milk
1 egg
4 cups sifted flour

Soften yeast in water and 1/2 tsp sugar. Add butter and the rest of the sugar and salt to the hot milk. Stir until sugar is dissolved. Cool, add eggs and yeast. Stir flour into the liquid ingredients until mixed. Turn out into lightly floured board. Knead quickly. Form into smooth ball. Grease in a bowl, let rise for one hour. Knead again, shape into rolls. Place in greased pan, let rise another hour in a warm place. Bake 400 degrees for 15-20 minutes.

Pita Bread

1 1/4 cup water
2 tsp sugar
1 package yeast
-mix and wait five minutes
1 tsp salt
3 cups flour

Knead 10 minutes, divide into 12 smalls balls. Roll or pat down into 6 inch flat circles 1/4 inch thick. Let rise ~45 minutes in a warm place. Cook in a 500 degree oven for 12 minutes.
