Anise Biscotti

Yansoon is a really good flavor to have with tea. This isn't the exact recipe, it's a regular biscotti recipe with some anise seeds mixed in.

Set oven to 325F.
Whisk: 3 eggs
1 tbsp lemon juice
Mix, then add:
2 c flour
1 c sugar
1 tbsp anise seeds
1 tsp baking powder
0.5 tsp baking soda
0.25 tsp salt

Press dough into cake pan, bake at 325F to 20-25 minutes. Cool, reheat oven to 300F. Cut into biscotti. Bake upright for 20 minutes, or less, until golden brown. Store in airtight container.

Magic Cookie Bars

As far as I know, nobody's ever gotten super powers.

1/2 c margarine
1.5 c graham cracker crumbs
1 can sweet condensed milk.
1 package chocolate chips
1.5 c coconut
1 c nuts

Melt margarine, sprinkle crumbs and press into a 13x9 pan. Pour milk and top with chips, coconut and nuts. Bake at 350 degrees.

Brown Sugar Press Cookies

3/4 c oleo (crisco)
1 c firmly packed brown sugar
1 egg, well beaten
1 tsp vanilla
1/8 tsp salt
1 tsp baking powder
2.5 c sifted sugar

Cream butter and sugar. Add eggs and vanilla. Beat until light and fluffy. Sift dry ingredients. Gradually add to shortening mixture. Blend thoroughly. Chill several hours or overnight. Fill cookie press. Form cookies on ungreased baking sheet. Bake 375 degrees for 6-8 minutes. When slightly cooled remove from pan. May be decorated before or after baking with colored sugar or small candies.

Forgotten Cookies

2 egg whites, at room temperature
2/3 c sugar
1 c chocolate chips
1 c rice krispies
1 tsp vanilla

In evening, preheat oven to 350 degrees. In a small mixing bowl beat egg whites until firm. Gradually add sugar until mixture will stand in peaks. Stir in krispies, chips and vanilla. Beat thoroughly but do not overbeat or over-mix. Drop onto foil lined cookie sheet. Place close as they spread little. Place in oven and immediately turn off heat. DO NOT OPEN OVEN UNTIL MORNING. If baking in the day, it takes six hours to bake.

Cookie Cutouts

1 c shortening
2/3 c sugar
3/4 tsp salt
2 tsp vanilla
Exactly 1/3 cup eggs (about 1 or 2, depending on size)
3 cups sifted all purpose flour

Combine shortening, sugar, salt, vanilla and eggs. Beat until smooth and light. Stir in flour. Wrap in wax paper and chill at least 2 hours. Remove 1/2 of the dough at a time. Roll 1/2 to 3/8 inch thick, on a lightly floured surface. Cut into desired shape. Bake on baking sheet 1 inch apart. To decorate brush with egg white, sprinkle with plain or colored sugar, tiny colored candies or raisins, nuts or currants. Bake at 350 F for 12-15 minutes.

Old Fashioned Oatmeal Cookies

1 c flour
1/2 tsp soda
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/2 c shortening, soft
1/2 c brown sugar, firmly packed
1/2 c white sugar
1 egg
1 tbs milk
1 c raisins
2 c uncooked oatmeal

Sift together flour, salt, soda and spices. Beat eggs, milk, sugar, shortening, Add dry ingredients. Fold in flour, raisins and oatmeal. Drop on greased cookie sheet by tablespoons. Bake at 375 degrees for 12 to 15 minutes.

Chocolate Chip Cookies

Um, at least it's not the ubiquitous Nestle recipe?

1/2 c shortening
1/4 c sugar
1/2 c brown sugar, firmly packed
1/2 tsp vanilla
1 egg, well beaten
1 c plus 2 tbs flour
1/2 tsp salt
1/2 tsp soda
1/2 c nuts, optional
1 package chocolate chips

Grease cookie sheet. Cream shortening, add sugar and eggs. Beat well. Add dry ingredients. Then chips and nuts. Bake at 375 degrees for 10 to 12 minutes.

Perfect Cookie Frosting

2 1/3 c softed powdered sugar
1/2 tsp cream of tartar
2 egg whites

Mix sugar and cream of tartar together in a bowl. Add unbeaten egg whites. Whip with mixer until stiff peaks form. Cover bowl with a damp cloth. Divide into separate bowls and tint different shades with food coloring.

Hermits

1 cup shortening
2 cups brown sugar, firmly packed
2 eggs
3.5 cups all purpose flour
1 tsp baking powder
1 tsp soda
1/2 tsp salt
2 tsp cinnamon
1 tbs nutmeg
1/2 c sour milk to buttermilk
1 c broken walnuts
2 c raisins
1 c dates, cut fine

Cream shortening, sugar and eggs. Sift dry ingredients, add alternately with milk. Add nuts and fruit. Drop by heaping teaspoons onto greased cooking sheets. Bake at 375 degrees for 10 to 12 minutes. Cook slightly, lift from pan.

Peanut Butter Cookies

1/2 c peanut butter
1/2 c shortening
1/2 c brown sugar, firmly packed
1 egg
3/4 tsp sugar
1/2 tsp salt
1/2 tsp baking powder
1 cup flour

Mix in order given, form into small balls and place on greased baking sheet. Press with a fork that has been dipped in flour and then press perpendicular to first mark. Bake at 375 F for about 10 minutes.
