Cookie Cutouts

1 c shortening
2/3 c sugar
3/4 tsp salt
2 tsp vanilla
Exactly 1/3 cup eggs (about 1 or 2, depending on size)
3 cups sifted all purpose flour

Combine shortening, sugar, salt, vanilla and eggs. Beat until smooth and light. Stir in flour. Wrap in wax paper and chill at least 2 hours. Remove 1/2 of the dough at a time. Roll 1/2 to 3/8 inch thick, on a lightly floured surface. Cut into desired shape. Bake on baking sheet 1 inch apart. To decorate brush with egg white, sprinkle with plain or colored sugar, tiny colored candies or raisins, nuts or currants. Bake at 350 F for 12-15 minutes.
