Family recipes, nothing secret. I can't even claim most of them are original. The source is mostly from a small box filled with index cards, newspaper clippings and scraps of paper with recipes jotted down. If notes are given for a particular recipe, they are quoted. I corrected most of the spelling, for clarity. I also translated myself when necessary.
Boil milk and cool to lukewarm. Put some yogurt, about 2 big scoops into a half gallon. Put in a container and wrap with blankets. Should be finished by morning.
For lebna: Put leban in a cheesecloth and colander and let drain.
