Mango Pickles

Don't let the name fool you. There are no mangoes in these pickles.

3 dozen mango peppers (1 dozen each red, yellow and green) cut in rings
1 dozen large onions
2 bunches celery
Mix 1/2 c pickling salt. Pour boiling water and let stand 5 minutes. Drain and repeat. Drain again.
In a large pan, mix and bring to a boil:
2 c vinegar
2 c sugar
1 tsp ginger
1/2 tsp red pepper
1 tsp ground mustard
1/2 tsp tumeric

Add pickles to boiling vinegar mix. Boil until tender. Put in pt. jars and seal.
