serves four
1 tsp olive oil
2 cloves garlic
1 chopped onion
1/2 cup celery
1/2 cup carrot
oregano or Italian seasoning
8 oz vegetable broth
16 oz can diced tomatoes
16 oz can garbanzo beans (hummus)
16 oz can kidney beans
4 oz tahini
4 oz parmesan cheese
Saute garlic and onion, celery, carrots. Add vegetable stock, tomato, beans. Boil then simmer. Garnish with tahini and cheese.
